This coffee is produced by selected farms in the Popayan region. The coffee is milled in Popayan and transported to Caldas to be decaffeinated.
This coffee’s decaffeination method is quite special. It uses a natural by-product from sugar cane along with water to remove caffeine. This approach avoids the high temperatures found in other methods, resulting in a brew that’s sweeter and more similar in taste to the original caffeinated coffee.
One major benefit of this process, besides the improved flavour, is that it takes place in Colombia. This means the supply chain is more streamlined, eliminating the extra costs and distance associated with shipping coffee to decaffeination facilities in places like Mexico, Canada, or Germany. Plus, the profits remain within Colombia, benefiting the local economy.
