The El Borbollon Mill has expertly cultivated these remarkable beans for over 100 years in the Apaneca-Ilamatepec Mountain Range of El Salvador. This mill is renowned for growing two varieties of Arabica coffee: Bourbon and Pacas. The unique growing conditions in the mountains, coupled with eco-friendly farming methods, create truly outstanding flavours in every cup.
The coffee plants thrive in the shade of native trees, which supports a slow development of the fruits, resulting in clean and sweet-tasting beans. Each ripe fruit is picked by hand, sorted, and sent to the mill for processing. In the mill, the cherries are placed into large tanks, where water helps move them to the de-pulper, separating the flesh from the beans.
After de-pulping, the beans are transferred to fermentation tanks for 13 to 15 hours. This process allows natural bacteria to break down sugars and alcohols in the bean’s mucilage. Once fermentation is complete, the beans are washed thoroughly and laid out on drying patios to dry for about 8 to 10 days.
