Adado plays a key role as part of the Yirgacheffe Coffee Farmers Cooperative Union (YCFCU), which was established with government backing to assist primary cooperatives in marketing and selling coffee. As a service provider, it is their priority and standard practice to advocate for each individual washing station. Union coffees are not given a generic label; instead, they are always traceable down to the kebele level.
While coffees from different regions are sometimes blended in the market to meet price demands, YCFCU exclusively exports coffee from the Gedeo zone. Since they do not own the coffee, they cannot mix lots from various washing stations without unanimous agreement and transparently stating the blend on the lot name. All coffees are hand-sorted upon delivery by farmers for weighing, with the process typically starting at 5 pm and continuing until after dark. Natural coffees are sun-dried on raised beds, covered overnight and during the warmest hours of the day.
This drying process can last up to 30 days until moisture levels reach an average of around 11%. Scoring 87.25 on the SCA scale, this coffee delivers a superbly sweet and juicy profile with hints of jasmine, bergamot, sweet spices, and distinct notes of strawberry and blueberry.
It is smooth and enveloping, with a medium body and mild citric acidity, while also exhibiting peachy and white tea-like characteristics.
