When the coffee grounds are compressed evenly, the tamper enables uniform saturation by hot water, resulting in a well-balanced extraction and a flavorful shot of espresso. Insufficient tamping can cause the water to flow too quickly, resulting in a weak and under-extracted shot of coffee.
Coffee tampers makes a firm, compressed coffee “puck”. This puck is key for great espresso. A good coffee tamp gives even flavour as water flows evenly through the coffee grounds. This stops “channeling”, where water takes the easy route and doesn’t unlock the taste potential of your coffee. Pressure also matters – Coffee tampers help the machine build pressure and this pressure pulls out the coffee’s full flavour.
The bottom line is that a well-tamped coffee shot will taste better!
How? Use even pressure when using a coffee tamper. Press down flat and firm on the coffee. Don’t press too hard, though as too much pressure makes bitter espresso. After tamping, wipe away extra coffee. Remember to always keep the portafilter clean.
