Consistency is what a commercial espresso machine is really selling. The tenth shot at 5pm should taste like the first one at 8am, whoever is on the bar. Here is how La Cimbali builds that in at each level of the range.
M26: stable temperature and simple controls
The M26 range is built around a thermal system designed for stable extraction. Smart Boiler technology manages steam and hot water so pressure holds during busy periods. On the BE heat-exchanger version, a cold-water mixing valve on each group keeps brew temperature steady without lots of cooling flushes. The TE adds ThermoDrive, which lets you adjust the water temperature and tailor each group to a different blend. With fewer electronics, the BE is also easy to run and maintain.
M40: the machine talks to your grinder
PGS (Perfect Grinding System) is La Cimbali’s link between machine and grinder. A compatible grinder-doser makes grinding and dosing corrections automatically, so shots stay on target without the barista intervening. The M40 goes further: the Barista Drive System recognises the portafilter and selects the right recipe to prevent errors, and the machine can connect to La Cimbali’s Art.In.Coffee platform for telemetry and fleet monitoring. Recipes and settings can also be adjusted from a smartphone app. For a busy bar with mixed experience levels, that removes a lot of guesswork.
M200: control for the coffee obsessive
The M200’s independent coffee boilers give you temperature control by group with GT1. On the Profile version you can also build a pressure profile for each selection, shaping body, acidity and bitterness for a particular coffee. Smart Boiler, Bluetooth, USB and Wi-Fi connectivity and PGS compatibility are also part of the package, and the touchscreen or 4/6 button options let you match the interface to your team.
Milk consistency too
TurboSteam automates milk heating and texturing, and TurboSteam Milk4 stores up to four automatic milk recipes. It is optional on the M26 TE RE, M40 and M200. If you can’t guarantee an experienced barista on every shift, it’s one of the quickest ways to make milk drinks consistent.
Do you need all of it?
More technology only pays back if you use it. A café serving one blend to a fast queue gets less from pressure profiling than a café rotating guest roasts. Match the machine to your menu and your team, not to the spec sheet.
