When espresso tastes wrong, the cause is almost always grind, dose, distribution, tamping or time. Change one thing at a time and taste after every adjustment. Here is how to read what your shot is telling you, and which Ikape barista tools help you fix it.
Sour, sharp or salty: Under-extracted. Water is passing through too quickly. Grind finer, check your dose isn’t too low, and use a 25–30 second shot as a starting point.
Bitter, harsh or drying: Over-extracted. Grind coarser, shorten the shot and check the coffee isn’t stale.
Thin or watery: Usually dose or ratio. Weigh the coffee in and the espresso out with espresso scales rather than judging by eye.
Spurting, uneven flow or a pale stream early on: Channelling, where water finds a weak path through the puck. This is the fault where the right tools make the biggest difference.
A quick check: if the stream starts pale on one side, or sprays from the bottom of a bottomless portafilter, you almost certainly have a distribution problem rather than a grind problem. Resist the urge to keep adjusting the grinder, as that only masks the real fault.
Fix channelling with better puck prep
Start with an espresso distribution tool. Levelling the grounds before you tamp removes clumps and air gaps, so water flows evenly through the whole puck. Ikape’s adjustable-depth distributors let you set the height once, so every barista distributes the same way.
Then tamp with a calibrated espresso tamper. A calibrated tamper uses an internal spring to deliver the same pressure on every shot, taking the guesswork out of tamping. Being level and repeatable matters more than force, and the Ikape calibrated tampers make both easier. They come in a range of sizes, so check your basket size before ordering.
Short on bench space? An Ikape combined distributor and tamper does both jobs in one tool, and means fewer pieces to lose in a busy service.
Good one day, off the next?
Look at consistency between baristas. A shared recipe and shared tools remove most of the variation. Dirty baskets, blocked shower screens and worn parts also cause bitterness and channelling, so a regular cleaning routine is often the cheapest fix of all.
