This innovative WDT tool offers a unique angle adjustment of up to 120 degrees, enhancing the traditional stirring experience for baristas. With two sets of interchangeable needles, including 6 (0.25mm) and 6 (0.4mm) ultra-fine stainless steel needles, customers can easily switch between sizes by unscrewing the handle head.

Extensive testing demonstrates that the 0.25mm needles are ideal for stirring ultra-fine coffee powder, while the 0.4mm needles effectively break up clumps for a consistent powder texture.

The Weiss Distribution Technique (WDT) was developed by John Weiss to address the issue of clumping in espresso grinds experienced by home baristas. These clumps, resembling small squares of coffee, can hinder the extraction process by preventing even saturation. Unlike other distribution tools like the Nucleus Coffee Tools’ (NCD), which mainly focuses on the top layer of coffee, WDT works on the entire coffee bed. By using an Acupuncture needle to break apart clumps and create an even coffee bed, WDT aims to improve extraction consistency.

An even coffee bed is crucial for proper espresso extraction, as uneven surfaces can lead to water channeling and uneven extraction. Water tends to take the path of least resistance, resulting in under-extracted and over-extracted portions in the final shot. WDT requires a more hands-on approach compared to tools like the NCD, but it offers the benefit of distributing coffee grounds more effectively throughout the bed, leading to a more balanced and flavorful espresso shot.
