The Farm: We are pleased to collaborate directly with this family-owned farm. This single origin coffee from Brazil originates from the Monte Santo de Minas region in the southern part of the Minas Gerais state. It is named after the year when the local Mogiana Rail Station was inaugurated in the town, commemorating the region’s significance in Brazil’s coffee production.
Mió takes great pride in the transparency of their coffee production, providing the most comprehensive and transparent production records we have encountered. These reports list the names of all farmers involved in the cultivation and harvesting processes, specific timings for each stage of green processing, and a wealth of other valuable information. The farm also utilizes satellite imagery to monitor all activities closely, ensuring operational efficiency while overseeing every logistical aspect.
Coffee Process: This coffee undergoes a natural process, retaining 70-80% of the sweet mucilage on the beans during drying. The beans are then stored in silos for 30 to 60 days, depending on the weather, until reaching the ideal moisture content.
The Catucai varietal, a hybrid of Icatu and Catuai, is a compact and resilient plant known for its high productivity, particularly suited for the lower altitudes typical of Brazilian coffee cultivation. It is a flavorful coffee, exhibiting prominent grape and maple syrup notes with a rich body. Grown by a remarkable family, we take pride in collaborating with the entire team at Mió.
