The Coffee: After years of searching for a decaffeinated coffee that truly matched the taste of regular coffee, Swiss Water emerged. We regularly compare this decaf with our caffeinated options and it consistently surprises us. Finally, a decaf coffee that captures the essence of its origin, Honduras! Swiss Water uses a natural decaffeination process that involves only green coffee extract and water, resulting in a 99.9% caffeine-free coffee. The process begins by soaking the caffeinated beans in water to create Green Coffee Extract (GCE), which retains all the water-soluble compounds present in green coffee except for caffeine.
The coffee, to be decaffeinated, is then cleaned, rehydrated, and placed in a large container where it is continuously circulated with the GCE. It takes approximately 8 to 10 hours for the caffeine levels to drop to 0.1%, with the caffeine being extracted through osmosis and filtered out using a carbon filter system. After this meticulous process, the coffee is dried, packaged, and sent to us.
The Region: COCAFELOL demonstrates the positive impact of participating in a cooperative. The company is committed to promoting sustainable agriculture by producing a large quantity of natural fertilizers from coffee husks and natural fungi. These fertilizers are distributed to farms at no cost. The business responsible for manufacturing and delivering the fertilizers was established with funding from the Fairtrade premium.
Wogan Coffee has been carefully roasting specialty coffees that are ethical, sustainable, and traceable since 1970. As a third-generation, independent family business, we are based in Bristol, the same city where Mr. Wogan founded the company over fifty years ago. Laura and James, the grandchildren of the company’s founder, now lead the business; James serves as our resident Q Grader at the Bristol Roastery Headquarters, while Laura is based in London.
