The Italian Job:
The coffee that comes from your moka pot will be espresso style. This means that the process that takes place in a stovetop moka pot isn’t hugely different to that of a Barista-style espresso machine! The coffee is ground fine, which means that the extraction rate on the coffee is at a maximum as the water runs up through from the bottom chamber through the coffee chamber. So how does the Italian coffee maker work? To some, a moka pot (or stovetop coffee maker) is a thing of witchcraft. But it can be one of the simplest when you understand the process. The ingredients are the same – coffee and water! Firstly, fill the bottom chamber with water, this water will rise up through the device as it heats up. Secondly, add some coffee into the basket of the middle section, sitting just above the lower water chamber. Next, screw the pieces together and place the intact moka pot on your stove (electric or gas is fine). Put a low heat under it and watch as the spout in the highest chamber produces fresh and amazing Italian-style coffee!
